Elaia is open (4) nights per week dinner only, Wednesday through Saturday. Elaia showcases original and global cuisine with a nuanced approach to fine dining: the cooking is both inspired and modernist; the service is both manicured and relaxed; the experience is a rare and delicate combination of elegance and rustic charm. Elaia's unique and extensive wine program has earned it a place in Wine Enthusiast's America's 100 Best Wine Restaurants, in 2014 and 2015. Our menu changes nightly. We offer a four-course prix fixe or a ten-course tasting menu. The entire menu is available a la carte as well. Executive Chef Ben Grupe is the captain of the American Culinary Olympic Team. Chef/Proprietor Ben Poremba is a 3 times James Beard Award Semi Finalist in the category Best Chef - Midwest.

Scope, Expectations and Requirements

The Chef de cuisine is responsible for the entire culinary operation of Elaia Restaurant. He/she will adhere to established traditions and standards while adding their influence on our menu. He/she shall collaborate with Elaia’s Executive Chef to influence future menu planning. He/she must maintain the highest professional standards for food quality and sanitation and will lead by example building a tight-knit team dedicated to excellence.

Key Expectations and Goals

The Chef de Cuisine must:

• Be hands-on – directly supervising/cooking items requiring skillful preparation.
• Have excellent culinary skills and team leadership qualities to meet guest expectations.
• Be an approachable leader – building an effective and efficient culinary team that bond together.
• Leads with presence – monitors performance of assigned staff and ensures that all procedures are completed to restaurant standards.
• Be personable and interact well with all levels of co-workers and guests.
• Engaged in their career along with a focus on the development of their team.

The position requires a strong organized leader who is committed to excellence in all matters. The right individual will be self-motivated, able to build a cohesive team, possess a modern approach to team building and menu planning and continually offer unique and distinctive dining experiences. The successful candidate must be a good fit with Elaia’s culture. He/she must demonstrate values, conduct and integrity consistent with Michelin acclaimed standards.
