2014 ACF National Convention
Competition Results

Congratulations to all the winners at the 2014 ACF National Convention. The Central Region came out on top this year.

  • Our own Stephan Schubert won the Pastry Chef of the Year.
  • Tim Prefontaine, CEC from the Central Region won National Chef of the Year.
  • Michael Garbin from the Central Region won National Chef Professionalism Award.
  • Chase Grove from the Central Region won National Student of the Year.
  • Johnson County Community College from Central Region won Student Hot Food Team.
  • And the Chefs de Cuisine Association of St. Louis won a 2014 Chapter Acheivement Award.

 

Congratulations again to everyone who worked so hard and competed in the ACF National Competitions.  You have all made us very proud to be a part of the ACF Central Region!<

Junior Hot Food Team Tryouts

Sunday September 14, 2014

Culinary Institute of St. Louis
at Hickey College

Junior team tryouts will be held on September 14th at Hickey College starting at 9:30 in the morning. Students are responsible for bringing in whatever they need from product to cutting boards.  Each candidate must do the following:

  • Tomato Concasse
  • Small dice an onion
  • Tourne 8 pieces of potato
  • 4 ounces of julienne potato
  • Butcher a chicken into the following:
    • 2 airline breasts
    • 2 thighs
    • 2 drumsticks with tendons removed and frenched
    • 2 wing tips
    • carcass (stock ready)

 

The participants need to have this accomplished with a hour and half time limit.

Charcuterie and Butchery Class

Sunday and Monday
September 21 and 22, 2014

Dear Chefs:

This  notice is to inform you that Cured Cuisine will be presenting a two day charcuterie and butchery class at Kansas City Sysco, September 21 & 22, with chef Brian Polcyn. Chef Polcyn co-authored two top selling books Charcuterie & Salumi with Michael Ruhlman, one of most highly regarded food writer’s today.

Cured Cuisine has recently held classes in South Florida, Orlando, DC, Atlanta, Nashville, Denver, Chicago, San Francisco, Portland, Oregon, NJ and San Antonio Many of the top chefs in each city were in attendance, including chefs from TV shows such as Hell’s Kitchen. Taste, Chopped and Top Chef. Plus, nationally known chefs such as David Burke, Morimoto, Emeril, Bradley Ogden, Kevin Rathbun and Norm Van Aken have sent chefs to our classes.

ACF chefs who take our class receive 11 CE points. All ACF Members will receive the early registration price of $599, even after the early registrtion deadline has past.

Change in Credit Card Processing Procedures

The Chefs de Cuisine website will no longer accept credit card payments for meetings and special events, as the processing fees used by the website processing provider were climbing. However, we will continue to accept credit card payments at the door for each event, using a moble card reader that has lower processing fees. For all future events, please bring your payment (credit card, cash, or check) with you to the event. Thank you for your understanding.

While this site will remain as our official website for news and event information, Facebook will give us an additional avenue for sharing information wih our members.
