2016 Spring Culinary Salon
Competition and Certification

Everyone is invited to come and view the competitions on Saturday and Sunday.

This will be an ACF sanctioned culinary salon and medals will be awarded. The decision of the judges will be final.

Information for Competitors:

Competition categories being held are:

  • Contemporary Hot Food “K 1-9” Series
  • Cold Food Salon (Categories A, B, C, and D)
  • Student Contemporary Hot Food "SK 1-9" Series
  • Student Contemporary Patisserie "P 1-2" Series

 

Certification testing will also be performed.

Competition Fees:

Individual Competition and Certification
      ACF Members     $ 50 per individual
      Non-Members      $100 per individual

Registrations must be received and paid for by April 20, 2015.

From Downtown St. Louis:

  • Take I-64 / Hwy 40 westbound.
  • Exit at CLAYTON Blvd and turn LEFT onto Clayton.
  • Immediately turn LEFT again onto S. OUTER 40 Drive.

 

From West St. Louis County:

  • Take I-64 / Hwy 40 eastbound.
  • Exit at LINDBERGH Blvd and turn RIGHT onto Lindbergh.
  • Turn left onto CLAYTON Blvd.
  • Drive past Warson Road and then turn RIGHT onto S. OUTER 40 Drive.

2016 Annual PFG Student Competition

Since 2006, PERFORMANCE Foodservice Middendorf has proudly sponsored a culinary competition among all the culinary programs in the St. Louis area. Each school puts together a 5-person team to compete for scholarship money for their school.

For this year's competition, the classical entree is has not yet been determined.

While the total scholarship amounts may vary by year, the school which wins the competition receives a generous scholarship from PFG. The second and third place schools and all remaining participating schools receive declining amounts in scholarship funds.

The competition consists of two phases:

  • An 80 minute relay-style skills competition.
  • A 90 minute hot-food cooking competition featuring a fish starter, salad, Escoffier's Classical Chicken, and a dessert.

The competition is held annually in the spring.

The annual PERFORMANCE Foodservice Middendorf Culinary competition was held on Friday, April 24th. at Le Cordon Bleu. Since 2006, PERFORMANCE Foodservice Middendorf has proudly sponsored a culinary competition among all the culinary programs in the St. Louis area. Each school puts together a 5-person team to compete for scholarship money for their school.

Regardless of outcome, this competition is intended to be a learning opportunity, to prepare young Culinarians for their future endeavors and to have some fun!

 

A big, big thanks goes to Performance Foodservice Middendorf for gathering the scholarship funds for the schools!

Chef Dan Holtgrave
Wins
2014 Chef of the Year

Chef Dan Holtgrave beat out Chef Rod Laurentius in a face-to-face competition to become Chefs de Cuisine's 2014 Chef of the Year. The COY competition was part of the 2013 Fall Culinary Salon, held at the Culinary Institute of St. Louis at Hickey College on Saturday and Sunday, September 28th and 29th.

Chef Holtgrave will be fêted at our annual Chef of the Year Dinner Gala, to be held on Sunday, November 10th at the River City Casino.

Fall Culinary Salon Results

On Saturday and Sunday, September 28 & 29, the 2013 Fall Culinary Salon was held at The Culinary Institute of St. Louis at Hickey College.

The competition started with a the Student Culinary Showcase, a competition geared solely to students. This allowed an opportunity for students to showcase their talents in an ACF-sanctioned competition without the tension of having to compete alongside senior, more seasoned competition veterans. An impressive number of students, 14, showed up to compete this day.

Following the student competition, 2 professional chefs competed in Category K/P and Cold Foods competitions.
